The cleaning and disinfection plan

  

A permanent cleaning and disinfection plan is provided to ensure that all sections of the facility and all equipment are properly treated. It also includes cleaning and disinfection of cleaning and disinfection equipment.

The application of this plan is a prerequisite for any production activity (Prerequisite Program). It is performed by specially trained staff.

This overall plan can be supplemented by cleaning and possibly disinfection operations, directly related to the production activity (washing of knives during product preparation, for example), generally carried out by the production staff. The frequency and nature of these cleanings / disinfection is directly related to the activity (volume, product) of production considered.

To prevent contamination of food, all equipment and utensils are cleaned, disinfected and rinsed as often as necessary and especially at the end and before each working day. Their removable elements in contact with food ustensils, knives and grates in particular, are separated, cleaned, disinfected and rinsed at the end of operations.

After stopping work, or at any other time, if the circumstances so require, the floors and walls of food handling areas are thoroughly cleaned.

The cleaning / disinfection plans specify in particular:

• Areas, equipment and utensils to clean,

• The nature of detergents and disinfectants, the dosages used, the duration of application of detergents and disinfectants (compatible with their effectiveness),

• Responsibilities and skills for carrying out the various tasks,

• Methods and frequency of cleaning and disinfection,

• Follow-up procedures, ...

The cleaning / disinfection plan also takes into account the intermediate cleaning operations that may take place during the day (for example, when there is a change of raw materials for the preparation).

When the establishment has facilities for the supply of private water (drinking water, clean sea water), these facilities are regularly cleaned and disinfected in accordance with the regulatory requirements (product selection, etc.). Cleaning and disinfection of these facilities are included in the cleaning and disinfection plan. For example, when the establishment stores clean seawater, the cleaning and disinfection of the water storage tanks is included in the cleaning and disinfection plan.


Le plan de nettoyage/désinfection prend également en compte les opérations de nettoyage intermédiaire qui peuvent avoir lieu en cours de journée (par exemple, lorsqu'il y a changement de matières premières pour la préparation). 

Lorsque l'établissement dispose d'installations d'approvisionnement d'eau privée (eau potable, eau de mer propre), ces installations sont régulièrement nettoyées et désinfectées en conformité avec les exigences réglementaires (sélection des produits, …). Le nettoyage et la désinfection de ces installations sont inclus dans le plan de nettoyage et désinfection. Par exemple, lorsque l'établissement stocke de l'eau de mer propre, le nettoyage et la désinfection des bassins de stockage de l'eau sont inclus dans le plan de nettoyage et désinfection.
